Recipe

Here is my recipe:- Sprinkle finely chopped red chilli over sliced fresh pineapple, leave to rest for 10 - 40 minutes. Griddle in a mixture of melted butter and oil. Serve hot with vanilla ice cream or chilled creme fraiche. Yummy!

recipe: cheese tortilla with chilies

2 corn or four tortilla for each serving
1/4 Cup Monteray jack/Muenster/or taco cheese
cut pepper in the round..use to taste: 6/7 is generally good
bit of cooking oil for the griddle or pan

oil the griddle with oil and place one tortilla on the oil. Spread the cheese evenly about then add peppers to taste. Cover with second tortilla. Cook til golden and cheese is somewhat melted, then flip(the tortilla, not you). again, cook until golden. eat and enjoy! You can add chicken or shredded beef if it suits you.
