Chilli Prawns Pasta Topping
Fry: 1 chopped onion, 1 red & 1 green pepper chopped, 1 finely chopped green chilli, 1 clove crushed garlic, in 2 tablespoons of olive oil for 3 minutes.
Add a tin of chopped tomatoes & a handful of black olives, then add 8oz of large prawns and 2 teaspoons of lemon juice and cook for a further 5 minutes.
Serve on a fine pasta with with black pepper, fresh basil and oregano (can be dried) as above.
Enjoy with a glass of red wine!
